Yesterday afternoon, Vivian asked that we make rainbow cupcakes. For various reasons, I was roped into this project, and I noticed that we didn’t have any cupcake mix. So I consulted the cookbook, looking for cupcake recipes to make from scratch. I suppose it shouldn’t have been a surprise: the cookbook led me to the cake recipes. In the end, a cake’s a cake, only the size makes it a cupcake.
But having made rainbow cupcakes before, I was intrigued: could I make a rainbow cake? After a little nudging, we set to work.
The cake is a silver whitecake, whose batter was split among six bowls and various drops of food colouring added. The batter bowls are then poured into the cake bowl (in order) and the thing is cooked as a cake. The icing is a typical almond flavour, sugar-butter icing.
As you can guess, the kids liked it.
